Recipe Alert: Bacon, Egg and Cheese Cups

There’s nothing I love more than waking up in the morning (ok, or afternoon!) and treating myself to a delicious breakfast–eggs, bacon, coffee, etc. So when I stumbled across this amazing recipe from Fat Girl Trapped in a Skinny Body on Pinterest recently, I knew my life would be forever changed for the better.

This recipe combines three of my favorite foods (eggs, bacon, and cheese) and it’s ridiculously easy to make. You’ll need a muffin tin, 12 slices of bacon (thick cut bacon worked best for me), 8 eggs, 1/2 cup of shredded cheese (the original recipe calls for cheddar but I used mozzarella and parmesan) and a pinch of salt and pepper. Feel free to kick things up a bit with some garlic powder, basil or even red pepper flakes.

First, you’ll want to preheat your oven to 350 degrees. Then, wrap each piece of bacon around the inside of your muffin tin cups. Don’t forget to spray your muffin tin first!

Then, beat the eggs, cheese, and spices just like you would if you were making scrambled eggs.

Carefully pour the egg mixture into each bacon-wrapped cup. I filled mine up about halfway. Once all your bacon cups are full, pop the muffin tin into the oven for about 35 minutes or until the eggs are fully cooked.

These are best served fresh, but feel free to refrigerate any leftovers for later. This also makes a great on-the-go breakfast!

P.S. You can make this recipe healthier by using only egg whites, adding veggies, omitting the cheese/bacon, etc.!
